This course presents an introduction to espresso where the basic taste characteristics are analysed thus serving as a practical guide to a correct extraction, roasting and focussing on all the various steps connected to the formation of the Crema. It will take you through the evaluation of the cup according to appearance, fragrance and flavour thus offering you a detailed guideline on how to recognize and classify the range of flavours that are to be found in certain single origins of both Arabica and Robusta coffee beans. Furthermore, you will be able to experience the differences and problems resulting from varying roast profiles and obtain important information on the creation and evaluation of Classical Italian Blends. |

After analysing and identifying the desired taste structure to be attained on the basis of the market segment into which the blend is to be utilized, you will have the opportunity to first taste and evaluate the single components which are to be used in your new blend. Extensive trials will follow ranging from finding the optimum roast profile, to the understanding of how the new blends perform in different extraction methods (espresso. Cappuccino, moka or filter). Furthermore, you will experience and understand how variations in the basic parameters of the blend (components of the blend, roast) and in the extraction process (dosage, grind etc.) can modify the blend. |
