WE NEVER PURCHASE OUR LOTS “BY DESCRIPTION”

We cup every lot we import. Our quality department is extremely strict. Combine this with espresso cup tasting, and all of the samples we receive have very little wiggle room. Espresso highlights everything: defects and merits. Our team cups looking for the former, and only after for the latter. In this way we are able to communicate with producers how processing techniques effectively condition the outcome of coffee in espresso and every other extraction.

A THOROUGH EVALUATION DETERMINES OUR CHOICE

In a world where importers have been found to self-assign high SCA points that often serve them as a marketing tool rather than a real evaluation of quality, we have kept working with seriousness, honesty and straightforwardness. We have not jumped on the specialty bandwagon once we realised it could profit, we have always focused on high quality coffee, training and consulting for our clients, with substance and not fanfare. As SCA members number 8, we can say we have quite some experience in the matter of specialty coffee.
After approving a lot purchase, we request an abundant pre-shipment sample to cup and evaluate. If it conforms to our expectations we authorize release of the sipment. When the coffee has arrived in Trieste we demand turn-out samples of about 3 kilos, which are then re-evaluated. Furthermore, if we find that the selection process had not been rigorous enough at origin, the lots are re-sent through defect-selecting machines.

OUR WAREHOUSES HAVE IDEAL STORAGE CONDITIONS

During the storage period we draw new samples on a regular basis to verify the coffee’s homogeneity through time. We keep all of these samples in our lab until 3 months after we sell the last bag of a lot. This enables us to be the only importer on the market to offer clients a quality guarantee on the coffee they purchase.
