In a world where importers have been found to self-assign high SCA points that often serve them as a marketing tool rather than a real evaluation of quality, we have kept working with seriousness, honesty and straightforwardness. We have not jumped on the specialty bandwagon once we realised it could profit, we have always focused on high quality coffee, training and consulting for our clients, with substance and not fanfare. As SCA members number 8, we can say we have quite some experience in the matter of specialty coffee.
After approving a lot purchase, we request an abundant pre-shipment sample to cup and evaluate. If it conforms to our expectations we authorize release of the sipment. When the coffee has arrived in Trieste we demand turn-out samples of about 3 kilos, which are then re-evaluated. Furthermore, if we find that the selection process had not been rigorous enough at origin, the lots are re-sent through defect-selecting machines.
