PRODUCTION AREA
Atitlán is one of Guatemala’s eight official coffee-growing regions, and its soil – the richest in organic matter across the country – makes it exceptionally suited to coffee cultivation. Here, coffee grows between 1,640 and 1,706 metres above sea level, along the lake’s shores and up steep volcanic slopes shaped by centuries of eruption.

THE FARM
The 90Ha coffee farm is nestled within the volcanic range that runs through Guatemala. To the east, the towering peaks of Fuego, Acatenango, Agua and Pacaya line the horizon, while to the west, Volcán Tolimán, San Pedro and Atitlán stand sentinel over the still waters of Lake Atitlán.
This dramatic setting creates a distinct microclimate: warm coastal winds meet high humidity, with average rainfall of 2,000 mm sustaining healthy plants and preserving the soil. The result is a rare balance of volcanic richness, altitude and moisture – a terroir that gives Atitlán coffee its unmistakable depth and character.

Natural Process

The harvested coffee cherries are selected, either manually or mechanically, to remove unripe cherries and foreign matter. They are then laid to dry on cement patios or raised beds, and turned regularly to avoid unwanted mold and fermentation. The whole drying process may last between three and six weeks, depending on climatic conditions.

This drying process allows the sugar from the pulp, mucilage (mesocarp) and skin (exocarp) to penetrate the beans, giving sweetness, body and a characteristic yellow hue (or bronze in the case of foxy beans).

When the dried cherries reach around 11% humidity, they are taken to the mill for hulling and kept in parchment (endocarp), before being milled and bagged.
